If 21 years of working in the food and beverage industry has taught chef Cameron Wetzler anything, it is to do one thing well and execute it perfectly. During the pandemic, that lesson prompted him to launch his food truck BlackOut Burger as a ghost kitchen, providing curbside eats to help party-goers on Charlestonβs peninsula satisfy late-night cravings. Despite no longer serving until 3 a.m., Wetzler has stayed true to his first love β smash burgers. By keeping his menu simple and straightforward, the food, as he proclaimed, βis delicious as hell.β
BlackOut Burger serves smashed quarter-pound patties topped with melted American cheese, caramelized onions, βfancy sauceβ and house-made pickles on a buttery toasted bun. For heartier fare, Wetzler suggested, βMake it a double, triple or a Hasselhoff, which is four patties with all of the βlevel-ups.ββ
When it comes to sides, Wetzler said, βWe donβt offer French fries. I know, I know, it breaks our hearts, too. The good news is, we do have other satisfying options like Frito pie, Zappβs Chips and seasonal salad.β
