Islands Catering Chilled Cucumber and Dill Soup recipe

3 whole cucumbers (seeded and peeled)
1 cup rough cut celery
½ cup Vidalia onion
1 teaspoon minced garlic
½ cup white wine
2 tablespoon honey
2 tablespoon chopped fresh dill
salt and pepper to taste

Place cucumber, celery, onion, and wine in a blender and puree until smooth. Remove from blender and place in a mixing bowl. Add garlic and honey. Mix in dill and season to taste. Chill for 2 ½ hour before serving. Garnish with dill sprig and diced red pepper if desired.
Yields 4 servings
